For the Scones
  • 1 3/4 cups all-purpose flour
  • 6 tablespoons granulated sugar, divided 4 tablespoons mixed into the dough, 2 tablespoons for sprinkling
  • 1 tablespoon baking powder For leavening
  • 1/2 teaspoon fine sea salt
  • 8 tablespoons unsalted butter, chilled and diced Kept cold for flaky texture
  • 3/4 cup heavy cream To bind the dough
  • 1 teaspoon ground cinnamon For flavor

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, 4 tablespoons of sugar, baking powder, cinnamon, and salt.
  3. Cut in the chilled butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream until the dough comes together.
  5. Turn the dough onto a floured surface and gently knead a few times.
  6. Shape the dough into a circle about 1-inch thick and cut into wedges.
  7. Place the scones on the prepared baking sheet and sprinkle with the remaining sugar.
Baking
  1. Bake for 15-20 minutes or until golden brown.
  2. Let cool slightly before serving.
